applesauce pops

Since it's been a really warm week, I thought it would be a good time to post this (I originally published this in my summer series for Mom*tog).  After all, summer is right around the corner.  

These popsicles couldn’t be any simpler and they’re made from one ingredient that you probably have on hand: applesauce. Your kids can help pour applesauce into ice cube trays.  After the trays sit in the freezer for about 20-30 minutes (or more depending on the size of your tray), you can insert sticks into each popsicle.  Little 3 oz. Dixie cups work well, too.  Read about this great tip when using Dixie cups here.  I was thinking apricot applesauce would be a delicious variation.  Can anyone think of any other additions or interesting variations?  A squeeze of lemon juice, perhaps, to brighten up the flavor?

Applesauce pops are a fun way to get extra servings of fruit–-after all, what kid can say “no” to an icy cold treat?
